The "chopped whole hog" at The Pit in Raleigh is some of the best Q I've ever put in my mouth. I always have to get that and the Carolina ribs when I go there. The sides are good too (although I tend to get a double order of the collards). I haven't tried the brisket there, but Ed Mitchell knows what he's doing when it comes to pork. Ed won the "ribs throwdown" when Food Network's Iron Chef Bobby Flay came to Raleigh this year.  Cool

This place is high on my list too. Ed Mitchell is a long-time BBQ master in the state, and everything I've heard about his place is good.

Allen and Sons north of Chapel Hill is owned (if nothing has changed lately) by Keith Allen.
Allen and Sons PBO was sold by the Allen Family to somebody years ago.

I love pork BBQ, but know I must ration out ('savor'?) my doses for health's sake.

The Pittsboro one was bought by Jimmy and Ronda Stubbs about 14 years ago.  I love their food!

Ate lunch at the Skylight in Ayden a couple of weeks ago. Got to be the best BBQ in NC but don't go expecting anything for the non-BBQ eaters in the group to be able to eat.  Only two items on menu - BBQ sandwich and BBQ tray (which includes BBQ, slaw and cornbread).  Probably one of just a handful of restaurants (it is so basic I hesitate to use that word) in NC to receive a James Beard award and a review in Gourmet magazine. 

Ate BBQ at Allen just north of Pittsboro once.  Got take-out and when I got home I found that the sandwich was a little bit of BBQ and so much grease that the bread was soggy with grease.  I think I was the last customer one evening before they closed.  They would have been much much better off to simply say they were out of BBQ rather than pour a 1/4 cup of grease on a bun and call it a sandwich.  Now when I want BBQ I'll drive to the nearest Smithfield's which will have to do until I can do better.
