Schools within 50 miles of a Whole Foods that participate in the National School Lunch program can apply to get a salad bar setup - applications September 1 - November 1.

My high school had a salad bar and a middle school I worked in had a salad bar and both were heavily used and didn't have a problem with people being nasty. A cafeteria worker kept an eye on it. It was a very welcome change from pizza and tater tots. I hope one of our schools applies and wins.

lots of high school and middle schools have salad bars around the country.  give the kids some credit.

Sort of with you there sshookup on the open salad bar. Last one I did (and BELIEVE me it was a LONG time ago), I observed a worker picking up dropped tongs OFF the FLOOR and directly plopping them back in the salad bar.  But who knows what goes on in any "kitchen", be it restaurant or schools. Inspections are sparse at best.
I'd agree with some sort of healthy prepared salad offering from a reputable source and (hate to say it, but packaged)!

Who's to say that a piece of that packaged salad didn't hit the floor before it was picked up and added to rest of the mix?  Pre packaged doesn't guarantee it is more germ free.

I'm just saying perhaps less chance of additional contamination if prepared by professionals then sealed in a container vs. an open bar. I no longer buy those bagged mixes in the grocery because of the high rate of recalls. Dang sure not eating off of anything that has a sneeze bar and a bunch of general public strangers rifling through it. JMO
